Here we go, it's a new year, and I'm excited to present a NEW variety to kick things off.
Spelt is an ancient grain and a member of the same family as wheat, barley, and rye that has been cultivated by farmers since the Bronze Age.
The gluten in spelt flour is a little more delicate than wheat gluten, but spelt is a good option for those looking to enjoy bread while cutting down on gluten a bit. It's also high in protein and zinc and has a lovely nutty taste.
